This traditional Korean dish, which is eaten raw, is considered one of the healthiest in the world and what's more...it turns out to be very good for your health . No wonder it was part of the official dishes of the 1988 Olympics!

The benefits of kimchi

The kimchi its reputation is due to its many benefits (and not its full-bodied flavors). Among other things, it actually helps to strengthen the immune system and temper inflammation of our body, which in itself improves our lines of defense against any virus, even Covid-19 .

All this is made possible thanks to very specific ingredients. Indeed, the kimchi is mainly composed of peppers and lactofermented vegetables, which provides a rich source of natural probiotics . Also, Koreans do not hesitate to add other condiments (garlic, ginger, onion, oysters etc) with other proven benefits.

How to prepare kimchi?

To prepare a kimchi, it's very simple, you need:

  • A salad bowl and a closing jar
  • 1 kg Chinese cabbage
  • 1 white radish
  • 3 cloves of garlic
  • 1 onion
  • Chives
  • Fresh ginger
  • Fish sauce
  • 1 red pepper (or 3 red peppers)
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon of sugar
  • 100 to 160g coarse salt

The steps :

  1. Cut your Chinese cabbage and white radish into strips and place them in your salad bowl. Fill everything with lukewarm salted water and sprinkle the cabbage with coarse salt. Leave to marinate for 2 hours, stirring occasionally.
  2. Peel and cut your spring onion, garlic, ginger, onion, mix everything with a little fish sauce, water and the seeded pepper. Reserve the sauce.
  3. Rinse the cabbage and radish, drain well!
  4. In a salad bowl, mix the cabbage and radish with the sauce and chopped chives by hand.
  5. Put everything in an airtight jar, packing it down well. Once finished, it is essential to let the kimchi rest in the refrigerator so that it is perfectly fermented.
