Kombucha:what is it?

Behind this name that gives chills to all Parisian ailments, there is a real miracle drink . Indeed, kombucha has become known as an elixir of immortality in Asia. This fermented drink is prepared with tea, which makes it very rich in antioxidants. Plus, it's low in sugar and high in probiotics , it therefore appears as a natural ally for the digestive system.

Kombucha strengthens the digestive system

You have trouble digesting all your Christmas chocolates? Don't panic, help yourself a little kombucha ! Indeed, it helps digestion, thanks to its large ecosystem of yeasts and bacteria. These have a totally beneficial effect on our digestive system, since they strengthen our microbiota. The intestine then develops a rich flora. How to make kombucha?

The kombucha can already be bought ready-made or cooked. To make your homemade kombucha, you need:

  • black tea or green tea,
  • 250 ml cane sugar,
  • boiling water,
  • 2.5 L of spring water,
  • 1 SCOBY,
  • 500ml plain kombucha.

Kombucha recipe:

  1. Bring the water to a boil then pour it into a large bowl. Steep the tea in it for 5 to 10 minutes.
  2. Remove the tea and add the sugar. Stir until dissolved.
  3. Add fresh water. Allow the liquid to cool to room temperature.
  4. Pour into the glass jar (4 liters), add the kombucha base and place the SCOBY on top.
  5. Cover the jar with a piece of cloth held in place with a rubber band.
  6. Store the jar for 7 to 10 days in a dark place at room temperature.
  7. Transfer the liquid into glass bottles. It can be consumed as is (after being cooled) or undergo a 2nd fermentation, which will add flavor and pleasant carbonation.
  8. For the second fermentation, at room temperature, add the juice, fruit or herbs.
  9. Keep 1 or 2 days at room temperature. When the bubbles have formed, store in the fridge to stop the process.
